Dream Cloud Butternut Squash —as developed by me, Jared, & Lana.
What you will need:
-1 Butternut Squash
-3 organic, cage free large eggs.
-1 TBSP Coconut Oil
-2 stalks green onion
-1 1/2 TBSP agave
-1 teaspoon cinnamon
-1teaspoon Pepperman (Or whatever spices you would like)
-1 white onion
-3 cloves garlic, minced.
-1-2 TBSP EVOO
-1/4 cup water.
Chop your butternut squash into cubed pieces. Throw into a pan over high heat with EVOO, water, and agave. After 5 minutes, add onion, garlic, and spices. Continue cooking over high heat for another 5-8 minutes, then reduce heat and cover. I eyeball my butternut squash, but usually if it is easy to cut through with a fork and has a really gorgeous brown to it, that is when I know to pull it.
In a separate pan, add your coconut oil, then cook 3 eggs over easy. (The secret to the perfect egg is to cover it with a lid while heating)
Pour the butternut squash onto a plate, then slide the 3 eggs on top, garnish with the chopped green onion, and voila! An AMAZING dish. Perfect for date night. Extremely cheap. I buy all organic, but you can easily get 3 non-organic butternut squashes for $5.00. I made this dish last night with my lovely Lana, also a woman who one could consider a ‘foodie’ and we together ravished the plate. I am probably going to make it 3 more times this week.
